Walnut Taco "Meat"

I'll be honest, this isn't really a "recipe" in the true sense, but more of a method... a method of dumping and not measuring!


The base is approximately 2 cups of whole walnuts which I place in a food processor and pulse until the majority of the nuts are broken into small bits.


Add about 1 Tbl of olive oil to a pan on low to medium heat, and add the walnuts. Stir frequently as the nuts burn easily.


Add either a 2 Tbl of taco seasoning (This may vary depending on brand, start with 1 Tbl and work up) OR add in a personalized mixture of granulated garlic, granulated onion, and powdered cumin, erring heavy on the cumin for that classic taco flavor.


Add Braggs liquid aminos, or other soy sauce/coconut amino option to taste. For me, I usually to a quick squirt or two. I know, so exact!


Continue cooking and stirring on low heat until the spices are aromatic and the nuts are slightly toasted. Remove from heat.


I usually serve this in lettuce taco boats with guacamole and fresh tomatoes. It's also fantastic in a taco style salad.


Optional Seasonings:

Peppers, a pinch of cayenne after you remove the pan from heat.

Nutritional yeast, this will add a "cheesy" flavor and give a boost of vitamin B12
